We want to upgrade our switches Nexus 93180 in NXOS , any recommendation about the version ?

Yes. Current recommended release is here:
This is the general recommendation by the Nexus BU, based on the overall experience in the field, number and impact of bugs etc. However, you should always read the release notes of the recommended release and see if any of the open defects are affecting your network: https://www.cisco.com/c/en/us/td/docs/switches/datacenter/nexus9000/sw/7-x/release/notes/70378_nxos_rn.html
If you want to go for additional features, you might want to go for 9.3(x). Still you should look at release notes. here is the repository: https://www.cisco.com/c/en/us/support/switches/nexus-9000-series-switches/products-release-notes-list.html
