ESXi 5.5 upgrade with 1000v

We are attempting to update our ESXi from 5.1 to 5.5.  The hosts are connected to a 1000v.  We attempted to attach the upgrade image for ESXi using update manager but it failed due to the dependancy of the VEM.  We originally installed the VEM manually, not using VUM.  I have researched adding the vem install to the ESXi image but not really clear on the process.  I have also discussed with members of our server team and they suggested simply booting to the upgrade and doing an upgrade manually.  I would expect that we should remove the host from the VSM and uninstall the VEM first then we can install the correct VEM and reattach to the VSM after the upgrade.  The cluster that is in question is a UCS B series chassis, is there a ISO image for VM that contains the proper VEM images available?

I am looking for the best method to upgrade these hosts with minimal downtime...
