SG500X Stacking / LAG Question

I have purchased several SG500x switches (6) in various configs (48, 48p, 24p) to replace aging switches, that ideally I can stack all together and manage as one stack. Two of them are in one location, the rest are scattered through the facility and are not fiber connected. In the past, I had LAGs setup from each switch to one of the central switches for redundancy and additional bandwidth.

Our new setup doesn't have enough "stacking" ports in the main wiring closet to allow me to connect (2) MGBT1 (SFP > Cat5) connections to the central switches. Is there a way that I can use a single port for "stacking" to provide centralized management and another LAG pair for redundancy and additional bandwidth? Or better yet, just use standard network ports for stacking / lag?
