3560 Switch with iSCSI device

I was wondering if it's possible to connect an iSCSI device to a Catalyst 3560POE switch?

Sure.
iSCSI transports SCSI packets over TCP/IP. It is an application layer (layer 7). Your 3560 switch works up to L3. All upper layers are transparent.
