Can I create a stack, and add this new one as slave while the current one is running in production?
Yes as long as the new stack member is powered OFF before attaching the stacking cable.

Agree with Joseph. You can configure, aka pre-provisioning, before you add the stack member. Personally, I'm a big user of pre-provisioning because people can start using the ports as soon as the new stack member boots up.
