connecting 2, Nexus 5K to single Nexus 7K

I dont have dual 7K on the core layer. I only have one, but in the distribution layer I have 2 5ks,

how different would the config be without dual 7K?

Can I create single port channel from both 5Ks to the 7K?

what do I need to be aware of?

Based on your daigram you dont need to configure VPC. Simple etherchannel/Portchannel is required.
VPC is required when you are going to connecting the switch to two uplink different switches and want to form the  bundle.

To have simplicity I would create two Port-Channel for your setup.

1- Port E3/45 &E4/45 to be part of 1 Port-Channel.
2- Port E3/46 & E4/46 to be part of 2nd port-channel.
