What is the pros and cons of 1 and 2 design?Do we   really need the  2nd topology

First one is best because it reduce the chance of suboptimal traffic.

In second one sup-optimal traffic happened when the stp block connect to one core SW and the other link is failed then the traffic must pass through the other access SW to Core SW.

Design 2 does not scale.  Try drawing it on paper but add more access switch and separate each switch with a physical barrier, like building floors.
