Configure each pool on your DHCP server.
On L3 equipement, where IP Gateway are configured, add the ip helper-address command with the IP of your DHCP server.

sure thing. Just make sure that on the corresponding layer 3 (sub or Vlan) interfaces, you use the command 'ip helper-address ip_address_of_the_dhcp_server'.
If you have trouble configuring this, post your zipped Packet Tracer project (.pkt) file...

did you send the correct file ? I opened your project, but there is no IP addressing, and the devices are not connected ?
