Cisco Catalyst 3560G Series switches x 2 Nos. & presently both switches are used independently, they wanted us to enable the High availability & redundancy between this 2 switches.

What do you mean by "high availablity"?
The 3560 series is not stack able if this is what you need.

Are those switches doing your intervlan routing?
If so, yes you could configure HSRP to give your LAN Subnets a level of redundancy.

Hi,
You can run HSRP between both the 3560 switches in order to get gateway redundancy.
As 3560 switches don't support stacking, you can use clustering as an option to get HA and redundancy.
