Looks like etherchannel limitation is a feature of hardware. & in your case 2960 support only 6 etherchannels.

Model 2970 & higher support more no. of etherchannels.

On a 2960 switch, you can create up to 6 Etherchannels and each Etherchannel can contain up to 8 ports which would yeild up to 800mbps if the ports used were 100 mbps or up to 8gb if the ports used were 1gbps ports.
