I have a 3750G and bought a new 3750X. It possible to stack these two together?

Yes you can. Just make sure they are runnning the exact same IOS image

I tried that by downloading the same IOS and booting to in on the new 3750X (after archiving the universal ios that came on the 3750X) but then I kept getting a licensing warning. Why is that?

Permit me to add something to Alvaro's post. To stack a 3750 (plain) with another, say 3750X, you need to have the same IOS version PLUS the same FEATURE set.
If your 3750 is running IP Base feature set then your 3750X should be running IP Base feature set too.

Quick question in regards to this...
If the 3750x is running 122(58)SE2 Universal Image with the IP Services License, and the 3750G is running the 122(58)SE2 IP Services Image, is that ok? I am assuming this is a valid match up, and that you aren't asking me to take the ipservices bin file from the 3750G and use it on the 3750X, correct? (Because under the 3750X on Cisco's site, you can't download the ipservices .bin image, just the universal one...)

As the other posters have noted, yes you can mix. Do note, mixing E/X model with original series models, negates StackwisePlus features.
Contrary to what the other posters have noted, I believe you can mix different IOS versions (at least on original series - but there are still compatibility requirements - so best to not have different IOS versions) and you can mix feature sets (at least on same series of 3750s - done it many times [including production] - don't recall if I've tried it on mixed series stacks).
