Manage a mtu change project

Hi,

I'm looking for reliable documentation on how to actually implement a mtu change on my network (DC and campus) with consideration of the potential impact.

I would like some help on these specific topics :

   - what type of documentation am I looking for ?

   - possible places where I can find it ?

One of the questions that I have to answer is should I enable the mtu globally on each switch everywhere ?
Can I just dedicate specific links to that new application (that requires me to raise the MTU) and leave the rest of my network untouched ?
Advantages, drawbacks, warnings for whatever choice that I could make on this type of change.

I want to document myself, but also be able to do it again in case I have to manage other topics in the future.

Hope somebody will be able to provide me with some guidance.

So I should look on the side of the application ?

It's Tanzu for vmware, and I'm being asked to raise the MTU to 1700 (for tunnels between servers)
