I have configured 3 x Meraki switch stacks
do I have to use the stacking interfaces/cables ?
the 100 cm stacking cables are not suitable for how we need to lay the cabinet out

you have 1 stack with 3 switches of 3 stacks of 3 switches per stack ?
whats the switch model ?

Ok for stacking you can use one of these part based on how much distance is between switches, if they are in same rack with no space then MA-CBL-40G-50CM, should be fine, you will need 3 of them

MA-CBL-40G-1M
MA-CBL-40G-3M
these switches only need 2 post rack.

Short answer: YES, you must use stacking cables for a switch stack to work. Without stacking cables it's not a stack it's just individual switches.
Meraki also supports "Virtual Stacking" for the purposes of templated configuration across multiple switches but that does not provide the physical resilience and redundancy that an actual stack with cables provides.
