Can you have more that one ip default-gateway on a switch?

No you cannot.

No you cannot. But you could try putting the switch's own ip address as default-gateway. If you do that, I think it will ARP for everything, and if your routers are responding proxy ARP for the routes they have, everything should work.
Try it, and let us know if it works OK.
