It was unclear to me from the CIsco VPC doc on whether a VPC (going to 2 separate 2Ks) will aggregate both links, and how does the process work for load balancing.

Yes, it will aggregate the ports by building Portchannels. As far as the load balancing goes, it depend on the device, most layer-2 switches by default use MAC base load balancing, meaning packet from PC1/VM1 uses a one link and MAC from PC2/VM2 uses the other link.

Thanks for that reply. It makes sense. Also, since we are using VPC, I'm guessing that means we don't need to code any Spanning-tree portfast or other parms, correct? I say this because one of the consultants that set up our system, had spanning-tree parms coded eventhough the link was VPC.
