So a little background, the company has around 90-120 users. Currently we have a 5515x cluster setup for failover, and we have an outside network and inside network(we use this as the server network), then we have another interface on the firewall which we use for the user network. I am aware that this setup is not based on best practices and not very scalable, that is why i want a core switch in between the access switches and firewall. Also i want to do the routing on the core switch, so have the SVI on switch and create VLANS for each access switch.
The model of access switches that we have currently are UniFi Switch 48 POE-750W. I am trying to find a core switch that fits a small to medium size business yet still scalable and works well with uplinks for these access switches. In my previous projects we only implemented real core switches like the 4500 series and 6500 series switches, any suggestions?

It really depends on your copper, fiber, 1Gig, 10Gig and budget requirement. If you don't have a lot of uplinks, you can use small Cisco 6800 series. The 6800 series is replacing the 6500 series. The 4500 will work as well, but it maybe a little too large for your environment.

To be honest, it depends on budget and how you see things growing in future.
Jumping from a single Layer 3 48x port UniFi switch to a 6800 seems like overkill but if you are planning on growing to hundreds of users and need more port density or throughput at the core then it may be the way forward.
Personally unless you have loads of throughput the I would look at perhaps a 3850 Stack? Get two 48x port switches. They will be Layer 3, have the ability to install 10Gb uplink modules, will likely be better than the UniFi spec for spec and having two of them means redundancy and future expansion if more port density is needed in future.
