Hello,
I would like to know if there is some laboratory or emulator to test this kind of switches. In fact, I would like to test Port Channel, Fabric Path, Quality of Service, Security, Users, Events, Troubleshoting, etc.
Do you know some guide or documentation to learn about these switches?

You may want to google for GNS3 or VIRL for NX-OS emulators. Personally I haven't used it so really cannot comment on how much of functionality testing it can provide but something worth looking into if you are interested.
Config guides/Datasheets/Whitepapers are best way to get information of the respective features on the Nexus switches.

thanks for your reply.
I have been googling VIRL but I have seen that it is mainly for routing purpose instead of switching while I don't know if GNS3 could be used for switching purpose.
With regard to documentation maybe some CCNA certification teaches about it.
