Hi everyone,
I a pair of 5K connected with 11 2k. Some of these 2k still have servers connected to them but not all of them. I have to decom and consolidate the remaining ports in one or may be two of theses 2K. My question is do I just have to copy the running config of the working port to the port I want them to be in? Will this be it?

There are things about your environment that we do not know and that makes it difficult to give a good answer to your question. We do not know how your 2K are configured and how they are connected to 5K. If there are similar connections, same vlans, same trunking, etc then yes moving a server would be as simple as copying the interface config from one 2K to another 2K.

you want to consilidate the ports from more fex to less fex devices in the network.
yes configure same configuration to the new fex port and move the device and test. make sure ACCESS vlan matches,
if any port-channel keep the same configuration as it is and allow the vlan in to port-channel and move the device.
once all devices and moved and working, start removing the fex one by one as decom process and default respected interface configuraiton.
