Someone knows what is the purpose of the config.text file that is stored in the flash memory and what is the difference between the startup config file that is stored in the NVRAM memory?

Different switch platforms store config files in different places.
Only the Catalyst 4k stores config and VLAN.dat file in the NVRAM.
Every other appliances (routers, APs, switches) store config and VLAN.dat in the flash.
NOTE: For the sake of "consistency", flash: can be called bootflash:.
