I'm an IT tech for a non profit organization in NYC with around 250 employees. We are moving to a new location next week, so our IT room has to be moved and re assembled at the new location. We have 15 switches, 2 routers and a ASA 5510 firewall. Is there anything I need to know about properly shutting down all of these devices, or can I just unplug them?

If they are really only switches, routers and firewalls, then you can just unplug them. Sometimes the chassis could house servers or something like that. But if that would be the case, you would probably know that.
As a precaution I would log into all devices and save the config.
