Hello - I'm looking to do a basic QOS configuration which states that VOIP traffic has priority over anything else.

Can anyone lend a hand?

I'm unfamiliar with the SGE's features, but if it supports AutoQoS, that might be enough to deal with your VoIP traffic.

Hi Jake, by default the switch runs a basic QoS. When the phone sends a tag packet ingress to the switch port, the PCP code within the traffic will determine the value. If you're using a conventional set up such as data vlan untagged, voice vlan tagged for the port connecting to the phone, the basic QoS value is 46 which is standard for this traffic type.
