All ios is build on base of Linux systems, and whenever you see platform keyword that meaning the linux based of ios.

"sh process memory" is data plane.
"sh process memory/cpu platform" is looking at the control plane.
Most NMS, including DNAC, will only look at the CPU/memory utilization of the data plane. There is only a handful NMS application will poll the control plane.
