Hi,
I am going to configure a AM GW 3610 but in Lync 2010 infraestructure there is not a "director" server, config. manual says that OCS/lync signaling destination address field should be a director server, which lync server should I configure with?

Please always mention the version numbers of the used components as well as some more info about the deployment.
In general check out the documentation first:
If you check out the lync2010 deployment guide on page 35:
So if you do not have a director(pool) and only have the FEP (front end server / processor), you point it to the FEP.
