The BE6K now comes with a TCS option for 1 record and 1 live stream. I can't find any docs showing the local storage capacity for recordings. Do I have to move everything to a SAN?

Take a look at the "Recommended Platform" section of the TCS 6.2 Install Guide.
Disc space: C (50GB) + E (250 GB) = 300 GB
You can also use external storage to store the TCS media files that would typically be on the E: drive if you need more than 250GB. Take a look at the TCS 6.2 Admin Guide for more information.

I was thinking of storage as in the number of recordings, hours, etc. I used to have a spreadsheet from the Tandberg days for the TCS appliance that broke down the estimated amount of recordings you could expect to be able to store locally, based upon several factors, (resolution, shared content, etc). Just looking for similar type info.
