Are there any documents or howto's?   I am trying to setup a mailbox for an existing user.

You can see that the CUCMBE docs here point to the UC doc for the User Moves Adds Changes guide:

That should tell you how to import them into UC, make sure the end users have a primary extension assigned on CUCM side.
