Deleting voice messages from user accounts

I want to set the deletion of heard messages to a certain date prior to our 30 day archiving tool. Is this possible in Unity (4.2) or does it need to be done on exchange server ?

You can either use Mailbox Manager built in to Exchange or Message Store Manager in Unity. Take a look at the following link and the links to these two products from this page.
