You can probably use COBRAS for this purpose.. though Unity Connection 2 doesn't seem to be listed as supported... http://www.ciscounitytools.com/Applications/General/COBRAS/COBRAS.html
Basically export everything from a supported source server, build your new server and selectively import users and other elements (call handlers etc).
You can try the export at least... that's non-intrusive.

The reason CUC 2.x isn't listed is because it's not (and never will be) supported by COBRAS - the help file for COBRAS explicitly states this in a few spots just to be extra clear - I get this question a lot.
Short version is the interfaces to get at data from off box in 2.x was simply not there - 7.0(1) was the first major release that had all the plumbing in place for fetching everything you need for a migration tool like COBRAS.
The export wont let you extract data at all for versions prior to 7.0(1).
