There isn't a direct equivalent to 'csim start' for SIP trunks. You have others commands which help you to troubleshoot:

-sh dialplan number xxx

-debug ccsip messages (debug during a call)

Apparently This command got deprecated from ios 17.X. im not sure exactly on which versions of 17. This command was working on 16.X.

What exactly you trying ? show dialplan number < dialed digit > will show the flow.
