UCS servers host IP telephony applications will be EOS soon

We have three UCS servers will be end of support next year (30 June 2023) . Those servers are hosting all IP Telephony applications.

we are looking for your support to propose the best approach for replacement with minimum impact and simple migration process.

applications installed are cucm, cuc, IMP ,CCX and expressways

Can you share the current versions and are you planning a version upgrade along with the hardware refresh ?

My recommendation would be this. Install the new servers as hosts in your VMware Vcenter in the same VMware cluster and then use vmotion to move the VMs one by one from the old hosts (UCS) to the new hosts (new HW).
