Hi Guys
Who could explain how the Unity Connection with ViewMail over Outlook? I could not find any document that explains how it works with this function example.

ViewMail is just an application that allows you to play/listen/record messages in email client such as Outlook, take a look at this for some additional info:

It basically can work with single inbox type deployment where messages arrive to Exchange inbox or IMAP type deployment where separate IMAP account in outlook points to UCON server.
You do not really need it to play the messages unless they are secured, it bascially makes it more convenient as you can play it right from within Outlook as oppose to opening the .wav attachment in other media player.

ViewMail for Outlook is an IMAP client for Unity Connection. There are a number of features that it provides and I'm not sure if your question is general in nature or specific to a particular use case. For starters, you can find quite a bit of info here:
