Hello;
I am needing upgrading from one CUCM cluster with 3500 users who are in version 7.1.5 to version 10.5.X, I can not use the product "Prime Collaboration Deployment" for the licensing of my VmWare in Bussines Edition 6000.
The question is whether I should first upgrade to version 8.X and then to 9.1 and then to 10.5X?
What would be the traditional process?

The traditional method is the same as we moved to Unix appliance and is still available to the day.
You need to review the following docs
a. RNs
b. Compatibility guide for 10.x
c. Upgrade guide
ALL the info you would need to do the upgrade, pre-reqs, procedure and changes after the upgrade to the VMs are contained in those.

As per Jamie's reply's you will need to read the release notes and upgrade guide before undertaking this.
