Hi
Is there any reason why I wouldn't be able to trunk to an Avaya CS1000e from a VCS? Or would I need a CUCM to perform this as per http://www.cisco.com/en/US/solutions/collateral/ns340/ns414/ns728/ns784/989942.pdf

Without expressly testing the SIP interop, the support for this integrtion is best effort. If CUCM sits in the middle (as an SME), then Cisco supports the CUCM to VCS integration as well as the CUCM to CS1000 integration. So that solution would be supported by TAC (within reason)
If you directly trunk VCS to your CS1000, then you will be responsible for testing the call flows and validating their operations. If there is an issue, you will also be required to investigate the issue and determine if the issue in in VCS or in the CS1000. As you can see the supportability of this integration will alter the amount of troubleshooting you will incur to validate the design and interop.
