I am just wondering as to what is the difference between an IP Phone and a Unified IP Phone?

Nothing - it's just a marketing term.
A few years back everything that Cisco wanted to be 'Unified' (whatever that is) got Unified inserted - Cisco 'Unified' Presence, Cisco 'Unified' CallManager, 'Unified' Phones... thankfully not Cisco 'Unified' Unity Unified Messaging though.
It didn't actually mean that anything changed in practical terms.

Hahaha. That is why i am having a hard time finding on the web the difference between these two. But nice term actually : " thankfully not Cisco 'Unified' Unity Unified Messaging though." hahahaha.
