Hi,
dont think there is any document specific to the test plan. however as per your environment you can check the basic functionality of cucm and other application along with the below points
check if all of your phones are registered to the cucm successfully.
check if the integration with cuc, ccx and other applications are working fine.
check if the internal and external calls are going through. and if the Gwys are registered successfully.
check for any voicemail issues etc.
