We are trying to upgrade firmware of the Intel X710 NIC on our UCS240 M5S servers. The servers are running VMware ESXi 6.7.
What is the best and easiest way to update the firmware in this case?
I took the usual approach and got the UCS 240 Firmware ISO downloaded and burned onto a USB drive, but after tried numbers of USBs and different versions of firmware ISOs (4.0(4m) and 4.1(3b)), none of them can mount successfully.

You should be able to use the vKVM, mount the ISO file, and boot the server to the HUU, which will give you options to upgrade firmware including the Intel card
Checking the HUU iso contents for latest HUU at https://www.cisco.com/c/en/us/td/docs/unified_computing/ucs/release/firmware_files/4_1/b_UCS_C-series_Firmware-Files_4_1/m-firmware-files-for-4-1-3.html it shows intel firmware provided is:
