Chances are that the OS boot partitions on your SAN location are based on legacy BIOS type boot. NVME would require UEFI type boot including the special FAT 16/32 EFI partition. Aside from needing some 3rd party utility to image and transfer your existing OS partitions, it would need to be able to convert a legacy to UEFI boot.
