Hi,
Is it possible to move a configured UC vm from one C Series server to another without using UCS Manager?

Colin,
I assume that you want to move one of the Unified Communications application server between two rack servers that have ESXi installed on them.
In short it is supported. You can shutodwn the servers and move the files or migrate them using vmotion.
Please read through the following doc for requirements and limitations.

Also, you should consider whether any of the parameters used to derive the licenses would change or not.

This is for a customer who does not have vCentre server or UCS Manager.
All of the disks are local to each server, there is no storage.
Under this configuration, i do not believe you could use vmotion.
What i am asking is, can you manually move the vmdk files from on C Series Server to another?

moving files manually after graceful shutdown of the servers is supported.

The only supported scenario is a manual move to a different server, e.g. for planned maintenance on the server or VMware software, or during troubleshooting to move software off of a physical server having issues.
Moving a shut down VM during a maintenance window, i.e. a "cold migration" or "host to host migration", is not vMotion and is supported.
