i am looking at the port channels configured on the FI. And this is it. port channel 21 is (eth 1/27-20) which is connected to the nexus 7000
so what are the rest?

Tony,
Those port channels are those created implicitly by having the appropriate 2nd generation hardware (220x, VIC 1240/80 and 62xx)
Those PC cannot be torn down and can only be seen through NXOS (UCSM-GUI will not show them) < Thanks to my colleague Jeff Allen

you are correct
2, 7000s ----> 2 FIs ---------> 2 2208XP-----> UCS (adapters are M81KR, VIC 1240, VIC 1280s)
port channels from FIs to 7Ks
