So getting my head around enabling FC Uplink Trunking all this means is all VSANs will run over any configured FC Port-Channels. Correct? Of course running in End-Host Mode will disable all VSANs with the IDs between 3840-4078.
I am planning to FC Port-Channel 4 links from the Fabric Interconnect to the upstream MDS 9148's and all VSANs will traverse this FC Port-Channel.

These are two different features. FC trunking is one, FC Port Channeling (ie. SAN Port Channeling) is another. You can definately use both together or separately.
FC Port Channeling - aggregates FC uplinks
FC Trunking - carries multiple VSAN on FC Uplinks (or Port Channels)
FC trunking is a Cisco specific concept.

Yes I know, bad explanation on my part........ But the "Enable FC Uplink Trunking" option in UCSM will enable multiple VSANs on FC uplinks.......

Correct assuming the VSANs are either global or at least created on that Fabric Interconnect.
Any Fabric-A only VSANs will not be allowed on a trunked FC uplinks on Fabric-B etc.
