I was digging through the Broadcom support to see if I could find the latest custom ESXi iso and it seems like several vendors showed up but Cisco did not... Any reason for this that anyone knows? And does anyone happen to have the latest ESXi custom iso?

Only reason to wait for iso is to avoid applying patch again, we are doing a fresh deployment it will be good to go directly on latest version, if it is soon we can wait, else we will take the path 8.0.u2-> 8.0.u3

Does the patch depot from VMware contain updates to the non-VMware components in the Cisco custom .iso file?

Correct. Starting with vSphere 7.0, Lifecycle Manager (vLCM, formerly vSphere Update Manager) includes Vendor Addons (which originate from the vendor but are redistributed via the same channel as ESXi updates/bundles). The non-customised ESXi image/bundle + the Cisco Vendor Addon is the same as the customised Ciscoo image/bundle.

Patching should be simple / seamless / agile / second-nature.
If the process is burdensome, then maybe practice is needed and this is a great opportunity to exercise those skills / process.
