The 891W is not supported on this platform but the SR520 is. With that being said here is a guide for the SR520 teleworker solution. The first part of the guide will explain how to setup the UC500 to be a VPN server. On the client all you need is the Host IP address or DDNS name, the Group Name - EZVPN_GROUP_1 and the password.

I would also use CCP to configure the router not CLI. CCP will walk you through the VPN configuration.
Download the software here.

Hi JRB,
Can you please post your running configuration on the 891, this should work so long as you have setup the tunnel to connect back to the UC560 correctly, and you make sure that on the UC-560 you make all 3 subnet's accessible over to the 891 I.E VLAN-1, VLAN-90 and VLAN-100 all three subnet's should be made available and you can do that via CCA.
If you have run up the IPSEC info on the 891, can you please also run the following command:
ROUTER# sh crypto session detail
This will let you know if the tunnel is even up
Whilst Marcus is right in a sense, all 800 series work exceptionally well with the UC-500 series, they are a robust appliance, I am not very well versed with the SR series so cannot help there.
Cheers,
David.

891 is not supported in CCA, but you can configure EZVPN on the UC500 CCA and program the 891 CLI. While this guide is for the 850 and 870 series, the config is essentially the same:
