Maybe I'm missing something obvious here, but the phones we have connected to our UC320 both show a date of Jan 1. Where do we set the date and time? I didn't see anything in the configuration.

You are right. There is no place to set the time manually. It is auto
configured by cisco's NTP server when you connect to the internet.
Is it connected to the internet now?

No place to set the system clock is by design because the customers should not have to worry about it. The time will be set correctly as long as the UC320 is connected to the internet during power up. The underlying technology is NTP and all taken care of in the background.
