I want to know if it's possible to use PIX in central position in VPN 's Hub and spoke architecture ?

Yes, you can configure the PIX as a hub. The sample config is available at http://www.cisco.com/warp/customer/110/pixhubspoke.html

Be weary as PIX as the Hub will not allow spoke-to-spoke connectivity.
