I'm going to install a Cisco Aironet 1310 with AIR-ANT2506 external antennas, someone will have the best practices for the installation of these antennas, considering that they will be installed on metal beams.
Do I Need to install two antennas or just one, which is the recommendation and why?

What are you trying to do?

considering that they will be installed on metal beams.

How high from the ground will the AP be installed?

I want to install a Cisco Aironet 1310 in AP mode, i have Many clients with wifi card andThey Will Be Connected Through This AP

The approximate height for placement of antennas along with the AP is 15 meters.

Gee whiz!  This is too far UP.  3 metres is the recommended height.

Are you going to do a mesh or bridge is is this just going to be a plain wireless access point and connected via an ethernet cable?

What it means is... is it going to be working as AP or as bridge?

WOuld it be point to point ot point to multipoint?

double antenna is for diversity.

For further details on this check this Cisco antenna reference guide... this is a good document.
