If an 2800 series AP was booted up for about and hour without any antennas attached to it, is there anything I can look at to see if damage was done? It still broadcasts the SSIDs but I'm just wondering if it's still running at maximum power and potential.

I wouldn't worry about that. It's more of the outdoor high output bridges that this can affect. If the SSID is broadcasting and clients are associated and the coverage is the same as others, you are fine. I have ran many AP's in labs with no antennas and then when I do add antennas, they work fine.
