For the Cisco WAP121, it is 2.4 GHz only, so as long as you are using channels 1-11 then should be fine unless it is advertising a non-supported country code.
Can check the country code, by configuring a network profile with the correct ssid then enter site survey mode under Settings > Status > Site Survey.
Will only show the APs in range if the configured ssid is correct and the AP is on a supported channel.
Do you know what model of 7921 you have (-A, -E, -P, -W)?
Should ensure it is running the latest fw version, which is currently 1.4.4.3.
Ensure the phone is set to 802.11bg only or some Auto mode.
For the UC500, you may need to enable world-mode in the radio configuration.
Example:
Interface dot11radio 0
world-mode dot11d country US both
See the 7925 Deployment Guide for more info.

Open a TAC case if you continue to have issues.

Glad it is working for you now.
If you didn't see any APs in site survey then either the network profile you configured with the SSID you are using was not enabled or the SSID was not entered correctly.
You may want to check the fw version to ensure you are using the latest code and not encountering any resolved issues.
Go to Settings > Model Information > App Load ID.

If you want seamless roaming, then all APs need to have the same SSID, security type and keys/credentials.
If you want to have different SSIDs for whatever reason, then roaming will not be seamless and will only move to the next profile once it completely looses connection to the previously connected AP (792x receives 0 signal).
But FYI, the 792x only supports up to 4 profiles, so at most, you can only provision 4 different SSIDs.
