And just to be clear - adding that many users to any AP is likely to result in a dreadful user experience unless the devices happen to be ultra low bandwidth devices with absolutely minimal demands on the WiFi (eg some types of IOT devices).  If they're regular clients it will be a disaster.  Hence @Leo Laohoo's reply - a survey will take into account the type of clients and the client requirements.  Get the design done by a qualified professional.  If you try to choose an AP based on the maximum number of clients it supports then you will be explaining the disaster to your manager and/or customer.

Is there any documentation for the C9100 access point series that publishes the Number of devices that can connect at the same time?

I have a 3700 in a site that has, from Mondays to Fridays, >110 wireless clients.  

No complaints.

Marketing figures are completely absurd as they are only based in the capacity of the software to allocate a maximum number of users.

The reality is a figure much lower than that, and I have not managed to see more than 45 ACTIVE clients in the same AP and radio without users complaining about low performance or disconnection events. I would say that going above 63 clients (IDLE and ACTIVE at the same time) will make the Wi-Fi network useless due to management and control overhead. Only by upgrading the technology to a coordinated one like LTE will make those ideal scenarios to work.
