Have 24 of the Cisco model 2702I access points and a pair of 5508 controllers. ISE is being implemented. How does it handle it when a client moves from one AP to the next? Is there anything we need to be aware of?

Hello,
there are many options to configure on WLC: 802.11r ( Fast Secure Roaming), 802.1k - neighbor reporting, 802.11v - BSS Transition Management, CCKM/OKC roaming for Voice

If your 5508 in cluster - it is ok, if not - you need to configure mobility group.

other factors you need to consider is how are you deploying SSID that ISE will be handing.
We have ISE deployed currently on two SSID, when it comes to roaming only concern we had was with some older symbol devices that would disconnect due to radius timeouts, so far with ISE we have not seen any.
One SSID is using 802.1x and the other is using a subset of ISE BYOD features..
