What I would like to achieve is a better wireless environment for some densely populated conference rooms while leaving rest of the network as is. This particular network is covering conference rooms in a large building.
Most places are covered by 1-3 APs, but one larger room in particular may need more access points. Since there are no “free” 2.4 GHz channels left, and the room is very open, 5 GHz is the only viable option as I see it.
So, is there a way to shut down the 2.4GHz radio on a few access points in this room?

Yup .. Click on wireless tab .. Legt hand side select the radio section. Then select the ap and hit the drop down to disable the radio ..
