Have a event where we are being supplied with 6x Cisco AIR-AP1141N-A-K9's. We are expecting ~300 devices to be connected to these APs in one large open auditorium. We are wondering if all 6 with the same config (SSID and WPA2) will be sufficient to provide network access? Or would we need a wireless network controller?

If you have a controller then it would be easy, as it will manage channel,power level by itself.
If it is autonomous, then you need to plan channels (1,6,11) in a way to reduce co-channel interference & adjust power levels if they are sitting close to each other. WPA2/AES with PSK SSID configuration would allow client to roam to one another without any additional configuration.

2504 is good enough.
There was a bundle promotion (AIR-AP2702I-UX-WLC) where you get 2504 with 25 AP licence almost free of cost when you buy 2x2702 (or 3702)

We are looking at the 2504's as well, in the product brief it mentions a minimum of 5 AP's. Yet the bundle only comes with 2, are we supposed to order 3 more AP's?

No, If you order that bundle you will get a 2504 with 25 AP license where you can register upto 25 Access Point onto that WLC. You will get 2x 2702 as well. If you already having 1141, then you do not want to buy more APs.
In case if you want to buy more AP, then I would increase the quantity of this bundle. So you will get additional 2504 for any other needs.

Do not worry about that.
It says, if you buy a 2504 separate, you should include min 5-AP license.
In this case you are going with a bundle where 25-AP license already included.
